Egg & Avocado Smash – JSHealth


Kickstart your morning with this breakfast classic! We’ve elevated the OG combo of creamy avocado and hearty boiled eggs with a dollop of Greek yoghurt, a dash of Dijon and chopped herbs for a protein-packed start to the day that’ll keep your energy levels stable and soaring. Our tip: boil a batch of eggs ahead of time and you’ll have breakfast sorted for the whole week!

Time to cook: 10, Serves: 1

Ingredients: 

  • 2 boiled eggs 
  • ¼ avocado
  • 1 tbsp Greek yoghurt, omit for dairy-free 
  • 1 tsp Dijon mustard
  • 2 tbsp chopped herbs, we used dill & chives
  • 1 tbsp lemon juice
  • 1 piece sourdough bread, or two small

Method:

Place the eggs, avocado, yoghurt, dijon, herbs and lemon juice in a bowl. Season with sea salt and black pepper. 

Toast your sourdough and spread the smash on top.
